What's the best Tex-Mex in Houston?

I'm in Houston this week. We all know D.C. is not particularly known for its delicious Mexican food, so I've made it my goal to eat as much tasty Tex-Mex as possible while I'm in the Lone Star State. Any suggestions? What's the best hole-in-the-wall place for authentic and delicious cuisine? Who has the best fajitas? Where should I go for the most refreshing margaritas?
