When I learned that this locally-owned, Oahu-based catering company recently won a national award from NACE (National Assn of Catering and Events), I thought ... "how nice" ... but when I saw their menu and photos of the event, that thought soon changed to ... "wow!"

The award was given to Creations in Catering was for "2011 Catered Event of the Year" - an event they staged and catered during the VIP APEC (Asia-Pacific Economic Cooperation) convention late last year. Approximately 350 people attended the gala at Washington Place (residence of Hawaii's governor) which showcased "Made-in-Hawaii" products, a menu of hand-passed hors d'oeuvres and multiple themed food stations.

MENU

Elegant hand-passed hors d'oeuvres were served on island-style wooden trays and baskets embellished with a miniature tropical floral bouquet featured:

  • - Spicy Ahi Poke Tartar with Tobiko Caviar on Taro Chip
  • - Kona Crab Fried Cake with Ohelo Berry (Hawaiian Cranberry) Cream with Zucchini and Roasted Pineapple Panko
  • - Kamuela Mushrooms on a Miniature Crostini, embellished with an Orange-Glazed Macadamia Nut Sprinkle

STATION-TO-STATION MENU

As VIP guests entered the Great Lawn event area of Washington Place, their eyes were greeted by a fabulous Hawaiian market-style configuration with elegant and spectacular island themed station displays with Asian accents, including a showcase of island products by the Department of Agriculture.

Polynesian Sushi Station - Served from an Asian embellished tented station, this presentation offered an enticing array of Temaki sushi created with a distinctive Hawaiian twist featuring the freshest seafood and ingredients of the islands, made to order by our sushi chef in authentic costume. Served with fresh wasabi and soy sauce and accompanied by a Sweet Ginger and Ogo Relish. Featured:

  • Savory Smoked Marlin with Mango Aioli
  • Pipikaula with Island Fruit Chutney
  • Kalua Turkey with Roasted Sweet Pineapple Aioli

Dept. of Agriculture's ''Waikane Fresh Hawaiian Fruit Stand'' - A spectacularly presented old time country fruit stand filled with island grown fruits supplied by the Dept. of Agriculture to showcase island produce, this station served a refreshing array of fresh-cut and chilled seasonal island-grown fruits and Maui Gold Pineapple on skewers. Selections were served with a Creamy Pineapple Dip and Passion-Fruit/Guava Dip.

''Kona Coffee Rubbed Carved Roasted Beef Tenderloin'' - A tender cut of Beef Tenderloin, hand-rubbed with Kona Coffee and enhanced with Alae Salt and Island Spices. The Tenderloin was roasted to perfection, carved on site and elegantly presented on Molokai Okinawan ''Purple'' Mashed Potato, piped duchess-style and finished with mango barbeque sauce or glazed with double reduced natural jus.

''Waimanalo Kihapai Hawaiian Street Market Salad Station - A spectacular street market stand presentation adorned with market umbrellas, cascading produce overflowing from the street vendor-style displays, featured crisp mini and micro greens from the lush gardens of Waimanalo displayed with a medley of fresh mushrooms, hearts of palms, fiddlehead ferns, Nalo corn sprouts and tomatoes, garnished with macadamia nut sprinkles and topped with Hawaiian sweetbread croutons. The fabulous island style salad was drizzled with farm grown sweet basil vinaigrette.

''Kanikapila'' Hawaiian Backyard Barbeque Broiler Station'' - Exotic Island/Asian influences were captured by this backyard barbeque style presentation which featured tantalizing tidbits, elegantly skewered and cooked on the grill while the aroma from the special custom Yakitori broiler enticed palates. Featured:

  • Soy Sesame Ginger Sirloin Skewers
  • Polynesian Hawaiian Shrimp Skewers
  • Hibachi Broiled Lemongrass Island Harvested Fish Skewers)
  • Kiawe Broiled Pulehu Huli Huli Chicken Skewers

''A Taste of the South Pacific Seafood Fantasy'' - This station paid tribute to the close ties between Hawaii and China a special bridge between two worlds! Featured:

  • Poke Panache on a ''Chinese Spoon Shooter''
  • Lomi Lomi Onaga (Snapper)
  • Poi Tasting

Dessert Station

  • - Miniature Asian /Island Style ''Halo Halo''
  • - Enticing Array of Fresh Hawaiian Crafted

Obviously for this event, Creations in Catering had a huge budget to work with but they pay the same level attention to detail and service when organizing small receptions and large formal, sit-down dinners.
