Nestled in the Texas hill country Huisache Grill is a stones throw from the New Braunsfles court house and locals and tourists alike dont seem to mind that the train tracks run just beside the restaurants patio area. Just as it is tucked away from the main street the name itself keeps it somewhat of a secret. After hearing it about, the hard part comes in actually pronouncing it (pronounced wee-satch). The name comes from the aggressive rangeland plant found in the states eastern half.
All three rooms are give hints at all things Texan the first with its plush booths, dim lighting, beaded board, and smatterings of local artwork that dot its pale green walls. Passing through, a small hallway leads into the main dining area letting the sky light shine down on a diverse selection of wine bottles.
On weekends small bands provide laid back live music amidst the wooden tables of diners and to provide solace to the throngs of hungry customers waiting in the patio area. A large stone fireplace sits in the corner and feels somehow comfortable despite the southern temperatures. Wooden beams slant to form the ceiling, and when the sun begins to fall the dark mahogany bar hosts just as many tea lights as wine glasses.
The final room does not have the romance of the first, nor the casual grandeur of the second its completely distinct and I find that people love it or hate it. Delicate glass chandeliers hang in the small space above wooden tables and modern, aluminum chairs. Windows join to form most of the walls, like a boutique so shiny and minimalist you force your hands into your pockets afraid to disturb. Immediately that feeling leaves you however, as friendly waitresses quickly usher you to your seat while handing huge chicken fried steaks to the table a few feet from where you sit.
In my experience, Huisache is one of those places you craveyou know what youre going to order before you ever have reservations. For the locals, and I am faulty on all charges about to be mentioned, you arrive and delude yourself into scanning over the menu and a few times try another dish that catches your eye, but nine times out of ten (if youre lucky enough to go regularly) you return to your favorite. For me, its the 303 Salad, a unique twist on a traditional Nicoise. Spinach lettuce, pine nuts, crisp green beans, hard boiled egg, paprika potatoes, topped with grilled shrimp or a steamed salmon fillet.
For my mother its the Southwestern Chicken Salad chocked full of crunchy tortilla strings, corn, shredded cheese, fresh avocado, tomato, with blackened chicken. Dad flip flops between the Chicken Fried Steak smothered in cream gravy (only in the south), accompanied with steamed broccoli and roasted potatoes or the mixed grill a combination of blackened quail, 3 shrimp, and grilled duck breast served with Texas mustard sauce, jalapeos, mixed vegetable medley and of course homemade mashed potatoes.
All main courses come with your choice of either salad or chicken tortilla soup and dishes run from home cooking such as the Cowboy Sirloin or Crunchy Rainbow Trout to gourmet pairings hinted with love from the hill country such as fried brie with raspberry chipoltle sauce or Chicken Yucatan with cream sauce and a side of pico de gallo.
For the first timers, dont worry there will be no buyers remorse. Anything you order will be perfectly seasoned, freshly cooked, and served with a smile. Casual but sophisticated, professional but not pretentious, Huisache Grill disillusions you into thinking youve stumbled upon a hideaway in Napa Valley until your waitresses approaches your table to ask, How are yall doing this evening?
My only other tid bit before I let you figure out what you like best about this gem, is order an end piece of the chefs Italian Crme Cakeyou wont be sorry.
